Pineapple bread

- 250 ml (1 cup) whole grain flour
- 180 ml (3/4 cup) all purpose flour
- 10 ml (2 tsp.) baking powder
- 2 ml (1/2 tsp.) salt
- 125 ml (1/2 cup) canned, sugarless, drained pineapples (set aside the juice)
- 85 ml (1/3 cup) vegetable oil
- 85 ml (1/3 cup) molasses or brown sugar
- 2-5 ml (½ to 1 tsp.) cinnamon
- 125 ml (1/2 cup) pineapple juice

Butter and flour a bread pan and preheat the oven to 350°F.
In a large bowl, mix the flour, baking powder, salt and cinnamon.
In another bowl, mix the remaining ingredients and add to the first mixture.
Bake for about 60 minutes.

Vary this recipe by adding grated carrots, nuts, raisins, etc.
